The Safety Committee oversees the practices and policies across our restaurants and teams, continuously evolving and improving our policies and procedures to keep our teams and guests as safe and healthy as possible. They maintain a document of guidelines in English and Spanish specifically for employees containing all relevant information, an up-to-date FAQ section to help team members navigate their work environments, and resources for learning about and mitigating the spread of COVID-19. The Committee is led by Chief Development Officer, Gabe Garza, and Director of Safety & Facilities, Dan Millstein, alongside the Chief Culture Officer/Executive Director, Chief Operating Officer, Director of People Operations, and Training & Operations Manager.

Gabe Garza oversees all aspects of restaurant operations, including safety and procedures, and helps lead collaboration on new health and safety standards. Gabe Garza has worked in a leadership capacity within multi-unit groups for 26 years, and holds a degree in microbiology with a minor in immunology. In 2005 during Hurricane Katrina, Garza ran a group of restaurants in New Orleans, where he navigated finding housing and medical care for staff, adapting ever-changing guidelines, working under capacity restraints and health restrictions, serving communities in a crisis environment, and rebuilding.

Dan millstein, Director of Safety & Facilities

Dan Millstein monitors and maintains compliance with all health and safety protocols set forth by city, state, and federal guidelines, and ensures the upkeep and inspection of all equipment, mechanical systems, and structural aspects of each property. With over 20 years in the restaurant industry, Dan Millstein’s position combines a thorough knowledge of facilities operations with extensive experience working with agencies and vendors to ensure health and safety standards are met and exceeded.

All FOH and BOH Managers will be Safety Ambassadors responsible for overseeing our teams as they implement and execute the practices outlined in this document. One FOH and BOH Manager will be designated as the primary Safety Ambassador per shift.
